This coobbook is a complete revision of our 1990 cookbook, Chopstix (now out of print). Nearly all the text is new and over 50% of the recipes have been replaced with easier-to-prepare recipes. As with Pacific Flavors, our first cookbook, all the recipes were given a final "OK" by a group of home cooks who evaluated the recipes after I had perfected them. I describe Quick Cooking with Pacific Flavors as "an American cookbook with Asian accents." For example, you will find recipes for guacamole, cornbread, meatloaf, Caesar salad, gravlox, fried chicken, and many other American recipes whose flavor is modified by Asian seasonings such as ginger, chiles, lime, cilantro, and Asian bottled condiments. In addition, there are many wonderful Asian salad dressings, marinades, barbecue sauces, and sauce preparations to use for everyday salads, grilled meats and seafood, and quick pasta dishes. In addition, this book was nominated by the International Association of Culinary Professionals as the Most Beautiful Cookbook of the Year.
