Hot Vegetables is one of five cookbooks in our "Hot" series. By "hot" we mean "contemporary," "exciting," "new," "boldly flavored," and not necessarily "spicy." This is a teaching book showing new ways to cook vegetables ranging from the common to the exotic. Recipes include appetizers, soups, salads, main course dishes, and side dishes, all arranged alphabetically from asparagus to zucchini. There are many easy recipes such as zucchini stuffed with shiitake mushrooms, a beautiful jicama-watercress salad, and a pumpkin soup with a cilantro swirl. Try the eggplant lasagna which uses supermarket eggroll skins in place of lasagna noodles to create a much lighter lasagna. And if you like more complicated recipes, make the chile rellenos which are filled with goat cheese, dried currants, cilantro, and pine nuts. Fantastic! As with our other cookbooks, there are many beautiful full-colored food photographs taken by my wife, Teri Sandison, with each vegetable recipe placed on dishes made by America's top glass and ceramic artists.
